Jason's Fettuccine Alfredo with Chicken & Vegetables

The best course Jason took at high school was "cooking," where he brought home this recipe!

- cook fettuccine noodles in a large pot of boiling water
- drain

- cook 2 boneless chicken breasts (cut in strips) in vegetable oil in frying pan until brown
- remove from pan

- saute vegetables (assorted as below) in oil in frying pan 2 or 3 minutes - until tendercrisp

- green pepper cut in strips
- zucchini, unpeeled, sliced
- carrots cut in julienne strips
- broccoli florets
- celery cut in diagonal slices
- sweet or green onions
- sliced mushrooms
(- whatever is in the house, and to taste)

- return chicken to pan to keep warm until sauce is ready

Alfredo Sauce
125 ml (1/2 cup) butter
250 ml (1 c) cream
2 ml salt
1 ml pepper
2 ml nutmeg
125 ml (1/2 c) Parmesan cheese
15 ml chopped freah parsley
- melt butter in cream in heavy saucepan
- bring almost to boil and whish in seasonings
- pour over cooked fettuccine
- toss with chicken & vegetables

Skid's Party Bars

1 cup brown sugar
1/4 cup butter or marge - mix together
Add 1/2 cup coconut
1/2 cup oatmeal
1 cup flour
1 tsp baking soda
Spread in a greased 9" pan
Filling--Combine
2 eggs well beaten
1 cup choc chips
1/2 cup brown sugar
1/2 cup nuts ( could be omitted and more coconut added)
1/4 cup butter or marge
1 T flour
Spread on cookie mixture
Bake at 350 for 30 - 35 min

Special Dessert

1 1/2 cups chocolate cookie crumbs
1/3 cup melted butter
Bake in greased spring pan at 325 for10 min.
Filling
1 package cream cheese
1/4 cup sugar
1 tsp vanilla
2 beaten egg yolks
6 oz melted choc chips
Mix til well blended
Beat 2 egg whites stiff
Add 1/4 cup sugar
Fold chocolate mixture into egg white mixture
Fold in 1 cup whipped cream ( 3/4 cup chopped nuts is optional)
Pour over crumbs and freeze
Make day before you serve it

Kentucky Sunshine Cake

1 yellow or white cake mix
1 package of lemon instant pudding
3/4 cup cold water
3/4 cup vegetable oil
Beat for 2 min.
Add 4 eggs and beat another 2 min.
Bake in greased 9 by 13 pan at 325 for50 min.
While hot prick cake with a fork
Pour glaze over the cake
Glaze
2 T melted butter
2 cups icing sugar
1/3 cup orange or lemon juice

Barbecue Sauce

1/4 tsp. chile powder
1/8 tsp pepper, 2 tsp salt
2 T brown sugar
1 T paprika
2 T Worcetershire sauce
1 tsp dry mustard
1/4 cup vinegar
1/4 cup chilli sauce
1 cup tomato juice
1/2 cup water
1 chopped onion
1/2 cup chopped celery
Simmer for 2 hours

Hairy Cookies

1 package miniature marshmallows
2 cups graham wafer crumbs
1 can condensed milk
(1/2 cup chopped nuts or cherries optional)
2 1/2 cups coconut
Line a 8 by 8 or 9 by 9 pan with half of the coconut
Press batter on the coconut. Sprinkle remaining coconut on top

(You can make your own cookie crumbs to use)

Teriyaki Meat Balls

1 cup soya sauce
1/2 cup water
2 cloves of garlic crushed, 2 T ginger
3 lb. ground beef
Form into tiny balls no more than 1" across.
Place in large roasting pan uncovered in 275 oven for 1 hr.
Or cook in frying pan.

Spinach Cheese squares

1/4 cup butter melted in 9 by 13 pan
2 10 oz package of spinach drained
5 eggs whisked
1 cup milk ( or 1 cup cottage cheese)
1 cup flour, 1 T baking powder
2 T minced onion
1 lb. grated sharp cheese
Bake 350 for 35 - 45 min.

( I tried it with 1 cup spinach and cottage cheese. It worked too, not as dense)

Cheesy Chile Squares

4T butter melted in 9" pan
5eggs whisked
1/4 cup flour, 1/2 tsp baking powder, 1/8 tsp salt, dash of cayenne
2 cups grated cheese
1 cup small curd cottage cheese
1 4oz can of diced green chiles
Mix all together and bake at 350 for 30 -35 minutes

bread stuffing

7 cups of soft bread crumbs
1/2 cup margerine or butter melted
21/2 tsp. poultry dressing spices or sage
1/2 cup of chopped onion
2 1/2 tsp. salt
1tsp. pepper
You can vary amounts of spice to your taste
This should do a 12 lb. turkey
