Recipe corner

Hey kids!!! Now that we've all feasted on the usual (turkey, smashed potatoes, broccoli casserole, and special dessert), I got to thinking. Wouldn't it be great if there was a place where we could all share those wonderful recipes?!
Then it hit me! ThorntonPages! And what if we had a web wizard who could organize them into a recipe book format? Well, maybe!
So, to start things off, here's a favourine recipe of the Wray branch of the family tree, Banana Muffins!

Best Ever Banana Muffins

3 large bananas
3/4 cup white sugar
1 egg
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cups all purpose flour
1/3 cup melted butter (margarine)
1/2 to 1 cup chocolate chips (optional- HA)

Mash bananas. Add sugar and slightly beaten egg.

Add the melted margarine. (If the bananas are quite mushy, you don't even
need this!)

Add the dry ingredients. Mix lightly, just until damp (not smooth!!), spoon
into greased muffin tins, OR muffin tins that have been lined with those
cupcake paper thingies, and bake at 375 degrees for 20 minutes.

Enjoy!!!

Brownies

Hey Lois, I'm gonna be making your killer brownies for myself and my house, and I had a question about the recipe. When I do the cake mix part, you say to use 1/3 of a cup of evaporated milk. Then later, you say to melt the caramels with the remaining 1/3 cup. That's only 2/3 of a cup of evaporated milk, and there's more than a cup in a can. So am I just using those 2/3 cups, or what? It's probably a stupid question, but I want to make sure I get this right, it's pretty important. Oh, and I bought milk-chocolate chips instead of semi sweet by accident, will those make much of a difference? Thanks in advance.

Hot Fudge Sauce

2 T butter
5 heaping T cocoa
2 cups sugar
2/3 cup boiling water
1T butter
4T corn syrup
salt
vanilla

melt butter, add cocoa, mix together. add water slowly, add sugar and
butter and let come to boil. Add corn syrup, boil 5 min. Add salt and
vanilla.

TERIYAKI Meat Balls

1 cup soya sauce
1/2 cup water
3 lbs. ground beef
2T. ginger
2 cloves garlic (crushed)

Form into tiny balls, about 1" across. Place in large roasting pan, uncovered in 275 degree oven for 1 hour.
Or do in frying pan on top of the stove

BROCCOLI CASSEROLE

1lb. broccoli cooked with 3 onions, quartered
Put in greased casserole
Cover with sauce of 2 T. flour, 1 cup of milk, 2T. margerine and 1/2 package of cream cheese
Layer with slices of cheese.

Bake at 300 F. for 30 min. Sprinkle with bread crumbs and 2T parmesan cheese and bake another 30 min.

Shortbread

Thought I'd post the shortbread recipe here so that it's always on record. Let me know if this is different from your recipe.

shortbread

  • 1 lb butter (2 cups - one entire brick!)
  • 1 cup fruit sugar
  • 1 cup rice flour
  • 5 - 6 cups of cake and pastry flour (as much as you can put in...crumbly)
Mix butter and sugar.
Add rice flour, then cake and pastry flour (try adding the 6th cup little by little, and if you don't use it all, don't worry.)
Knead the dough.
With rolling pin, flatten the dough to the thickness you want (1/2 -3/4") and cut into squares. Jab the squares with a fork.
Bake at about 300† (maybe 325† depending on your oven). Check the cookies after 10 minutes. If they are starting to darken on the corners, they are done. Don't let them darken too much.

Trish's perfect brownies

The one thing about this recipe...you will want to eat the brownies when they're hot and fresh, but don't! They are better the next day. Honestly!

- 1 cup butter (or margarine if you must, though I've never used margarine)
- 4 squares unsweetened chocolate
- 2 cups sugar
- 4 eggs
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- (optional... 2 cups coarsely chopped nuts...I never do this)

Step 1 Preheat oven to 350† F. Grease 13' by 9' baking pan. In 3-quart saucepan over very low heat, melt butter (marg) and chocolate, stirring the mixture constantly.

Step 2 Remove pan from heat and with a spoon, stir the sugar into the chocolate. Allow mixture to cool slightly.

Step 3 Add eggs, one at a time, beating until well blended after the addition of each egg.

Step 4 Add the flour, vanilla and salt to the mixture and stir in well.

Step 5 - optional Add the nuts to the mixture and stir in well.

Step 6 Pour mixture into greased baking pan and bake in the oven for 30-35 minutes (just a note, I usually check at about 20-25 minutes... sometimes I like them a little underdone). Brownies are done when toothpick or knife inserted in the centre comes out clean.

Mmmmmm!

Trish's favourite potato soup

ï 1 tbsp olive oil
ï 1 medium onion, chopped
ï 2 cloves garlic, minced
ï 1 medium carrot, sliced
ï 1 celery stalk (including leaves), sliced
ï 4 medium potatoes peeled, cut into chunks
ï 4 cups chicken stock
ï 1 1/2 tsp dried thyme
ï 1 bay leaf
ï 1/2 cup milk
ï 2 tbsp finely chopped parsley (if you don't have this, don't worry)
ï salt and pepper

Heat oil in large saucepan over medium heat. Add onion, garlic, carrot and celery; cook 5 minutes until slightly softened. Add potatoes, stock, thyme and bay leaf. bring to boil, reduce heat and simmer partially covered 20-25 minutes until potatoes are very tender. Discard bay leaf.

PurÈe potato mixture until smooth (I use the Braun hand-mixer...you may use something else). Stir in milk, parsley and salt and pepper to taste. Serves 4.

Carolyn Finlay's Best Choc Chip Cookie recipe

The best home made cookies ever... I used to babysit her kid and she made these delish cookies and I FINALLY got the recipe for them. She insists on Blue Bonnet margarine. Really.

Ingredients:

BLUE BONNET Margerine
Brown sugar
White sugar
2 eggs
Vanilla extract
All-purpose flour
Baking soda
Any ol' choc chips (1 pkg. 350 g. size)

Method:

1. Cream 1 c. BLUE BONNET margerine together with 1 c. brown sugar & 1/2 c. white sugar
2. Beat in 2 eggs & 2 tsp. vanilla extract
3. In a separate bowl, lightly mix together: 2 c. flour & 1 tsp. baking soda
4.Gradually add and blend flour mixture to margerine/sugar mixture
5.Gradually add (ie. 1/2 c. at a time) 1 pkg. (350 g.) of any ol' choc chips
6.Use teaspoon to scoop generous blobs of mixture & place blobs on UNgreased cookie sheet
7.Bake at 375 F for approx EIGHT minutes (Most recipes say bake 10-12 mins., but then the cookies harden in the oven. 8 mins. keeps 'em soft)
8.Cool awhile & then...ENJOY!

Noodle Robinson

1/2 lb. broad noodles, cooked
1 1/2 T butter
1/2 green pepper chopped (optional) some slices spicey sausage (opt)
1 can mushrooms (optional)
large onion chopped fine and sauteed in butter
11/2 lb. ground beef
1/2 lb grated chees1 can tomato soup
5 oz. can tomato sauce
Mix all together and bake at 400 degrees for 30 min. reduce heat to 325and bake another 25 min

Yum Yums

1 1/2 cups flour
1 cup brown sugar
1/2 cup butter or margerine
Mix together and pat into bottom of 9by 13 buttered pan
2 eggs lightly beaten
1/2 cup dessicated coconut
1 cup walnuts ( it really does taste better with the nuts but you might use chocolate chips instead)
2T flour
1/4 tsp baking powder
1tsp vanilla pinch of salt
Mix together and spread on batter
Bake at 350 degrees for 30 min

Easter Eggs

Fondant Easter Eggs

1/2 c. butter (room temp)
6 c icing sugar, sifted
1 300 ml can sweetened condensed milk

-cream together (may need more or less sugar), use hands toward end of
mixing
-take out about 1/8 of mixture, and add orange food colouring. Shape into
8-10 yolks
-divide white fondant into 8 or 10 parts and shape around yolks
-let stand on waxed paper until set
-melt 8 squares of Baker's semi-sweet chocolate in microwave, or in top of
double-boiler over hot NOT boiling water
-dip eggs and let set (very messy!)
-store covered in fridge

Barb says add a glob of shortening to the chocolate (she uses chocolate chips)

Pork Tenderloin

Mix together equal amounts (1/3 cup?) of:
dijon mustard
honey
soya sauce
Marinate for a while, then barbeque!

Never Fail Hollandaise

ï 1 cup melted butter
ï 4 egg yolks
ï 1/2 tsp. salt
ï pinch of cayenne
ï 2T lemon juice

Gently melt butter and cool to room temp but still keep it as liquid.

Beat egg yolks until thick and pale.

Add salt and cayenne and beat again.

Add cooled butter 1tsp at a time, beating to make sure it's blended before adding the next tsp.

After each 4tsp, add 1tsp lemon juice. Continue slowly until all butter and juice are used.

Cover and refrigerate. Use on your vegetables.

Mexican Chicken

This is my latest, greatest, easiest slow cooker chicken recipe. AND it's a hit at potluck dinners!

Slow cooker Mexican chicken

1 jar salsa 4 chicken breasts (boneless, skinless)
I can black beans (drained) 1 can niblets corn (drained)
1 pkg. cream cheese

- cover the bottom of your slow cooker with a layer of salsa (I used medium)
- put chicken breasts onto the salsa
- cover with drained beans, then corn
- cover this with a layer of salsa
- put cheese on top
- cover again with salsa

Cook all day in slow cooker. I have an Auto setting which heats to high, then goes down to low. I匇 sure low would be fine for all day cooking. After work (or several hours in), stir the mixture together. Stir quite regularly before serving (to break up the cheese and the chicken).
Serve with or on rice or Spanish rice.

Spaghetti Sauce

Thank you Mary Moore! This is the best sauce recipe in the world!

2 lb hamburger
2 cooking onions, chopped
1 7 1/2 ounce can tomato sauce
1 can tomato soup, undiluted
1 13 ounce can tomato paste
1 28 ounce can of tomatoes
3 cups water
3 T white sugar
2 T Worcestireshire sauce
1 tsp Tabasco
3 tsp salt
1 1/2 tsp oregano
1 tsp garlic powder
1 tsp basil
1 tsp celery seed
1/2 tsp pepper

- in large pot (dutch oven) saute meat and onions until all redness disappears from meat, and onions are soft, but not brown (break up meat as it cooks)
- add all remaining ingredients and combine thoroughly (I bring it to a boil)
- turn down heat, and simmer uncovered 2 1/2 to 3 hours, stirring often
- serve over noodles, or use as the meat layer of lasagna
- freeze leftovers

Collecting other recipes...

Since Kathy's posted a couple of recipes recently, I started going through the recipes online here. We have many family favourites (shortbread, yum yums etc) but I think there are some missing. Like those wicked chocolate caramel thingies that Kathy made...or was it Lois...anyway, there's also Barb's chocolate chip squares, I wouldn't mind having the Penuche (sp?) icing recipe.

And Christmas cookies and stuff...mum's meatballs. Hmm. I'm getting hungry!

Christmas morning wife Saver

16 slices white bread, crusts removed
Slices of ham or back bacon etc.
sharp cheddar cheeseMake int sandwiches and place in a greased 9x 13 pan
Combine;
6 eggs
3cups milk
1/4 cup of minced onion and of green pepper
1/tsp. dry mustard 1-2 tsp worcester sauce
salt, pepper and dash of tobasco sauce ( you can add salsa or chopped chilis to spice it up)
Pour over sandwiches, cover and let stand overnight in fridge
Top with 1/4 lb butter and bread crumbs
Bake uncovered for 1 hour

Hash Brown Casserole

2 lb. frozen Hash browns, slightly thawed
1 500 ml. carton of sour cream
2 tins of mushroom soup
1/2 cup of melted butter
grated oniion and salt to taste
2cups grated cheese
Mix all together
Parmesan cheese sprinkled on top
Bak in 9x 13 pan for 1- 11/2 hours

Chocolate marshmallow bars

1/2 cup butter
2eggs
3/4 cup flour 1/2 tsp baking powder, 1/2 tsp salt 1/2 tsp vanilla
1cup sugar
2 squares of melted chocolate

mix and put in an 8x8 pan. Bake 30 min at 350
Cover with small marshmallows and return to oven to soften the marshmallows
Icing
3T butter
1square of melted choclate
1 cup icing sugar
!/8 cup of milk

let stand a day before serving

Liz's Brownies

Stir together
3 eggs
3/4 cup melted butter
1 tsp. vanilla
Mix well and add to above
11/4 cp flour
3/4 cup cocoa
1 tsp baking powder
1/2 tsp salt
Bake in9x13 pan for 25 min. You can sift icing sugar on it when it'e baked. Nuts and chocolate chips are optional.

sweet and sour recipe

This is from the Mary Moore cookbook, and is actually called "Party Pork, Chinese Style."

Instead of 1 lb of cubed pork, dredged in 1/4 cup of flour, 1 1/2 tsp salt and 1/8tsp pepper, I make up a pile of little meatballs (a pack of lean hamburger).
I put the meatballs in a frying pan with the lid on to cook (med temp?) while I make the sauce.
Check the meatballs from time to time, and remember to turn them and drain the fat off.

Sauce:
1 cup celery, diced
1 green pepper, slivered
1 small onion, thinly sliced
1 19oz can of pinapple tidbits with juice
3/4 cup ketchup
1/2 cup brown sugar, packed
1 T prepared mustard
1 T Worcestershire sauce
1/4 c (approx) flour
salt & pepper to taste

Mix together, and pour over meatballs.
Stir, cover and simmer (stirring occasionally) for 30 minutes.
Serve over fluffy rice.

bread stuffing

7 cups of soft bread crumbs
1/2 cup margerine or butter melted
21/2 tsp. poultry dressing spices or sage
1/2 cup of chopped onion
2 1/2 tsp. salt
1tsp. pepper
You can vary amounts of spice to your taste
This should do a 12 lb. turkey

Cheesy Chile Squares

4T butter melted in 9" pan
5eggs whisked
1/4 cup flour, 1/2 tsp baking powder, 1/8 tsp salt, dash of cayenne
2 cups grated cheese
1 cup small curd cottage cheese
1 4oz can of diced green chiles
Mix all together and bake at 350 for 30 -35 minutes

Spinach Cheese squares

1/4 cup butter melted in 9 by 13 pan
2 10 oz package of spinach drained
5 eggs whisked
1 cup milk ( or 1 cup cottage cheese)
1 cup flour, 1 T baking powder
2 T minced onion
1 lb. grated sharp cheese
Bake 350 for 35 - 45 min.

( I tried it with 1 cup spinach and cottage cheese. It worked too, not as dense)

Teriyaki Meat Balls

1 cup soya sauce
1/2 cup water
2 cloves of garlic crushed, 2 T ginger
3 lb. ground beef
Form into tiny balls no more than 1" across.
Place in large roasting pan uncovered in 275 oven for 1 hr.
Or cook in frying pan.

Hairy Cookies

1 package miniature marshmallows
2 cups graham wafer crumbs
1 can condensed milk
(1/2 cup chopped nuts or cherries optional)
2 1/2 cups coconut
Line a 8 by 8 or 9 by 9 pan with half of the coconut
Press batter on the coconut. Sprinkle remaining coconut on top

(You can make your own cookie crumbs to use)

Barbeque Sauce

1/4 tsp. chile powder
1/8 tsp pepper, 2 tsp salt
2 T brown sugar
1 T paprika
2 T Worcetershire sauce
1 tsp dry mustard
1/4 cup vinegar
1/4 cup chilli sauce
1 cup tomato juice
1/2 cup water
1 chopped onion
1/2 cup chopped celery
Simmer for 2 hours

Kentucky Sunshine Cake

1 yellow or white cake mix
1 package of lemon instant pudding
3/4 cup cold water
3/4 cup vegetable oil
Beat for 2 min.
Add 4 eggs and beat another 2 min.
Bake in greased 9 by 13 pan at 325 for50 min.
While hot prick cake with a fork
Pour glaze over the cake
Glaze
2 T melted butter
2 cups icing sugar
1/3 cup orange or lemon juice

Special Dessert

1 1/2 cups chocolate cookie crumbs
1/3 cup melted butter
Bake in greased spring pan at 325 for10 min.
Filling
1 package cream cheese
1/4 cup sugar
1 tsp vanilla
2 beaten egg yolks
6 oz melted choc chips
Mix til well blended
Beat 2 egg whites stiff
Add 1/4 cup sugar
Fold chocolate mixture into egg white mixture
Fold in 1 cup whipped cream ( 3/4 cup chopped nuts is optional)
Pour over crumbs and freeze
Make day before you serve it

Skid's Party Bars

1 cup brown sugar
1/4 cup butter or marge - mix together
Add 1/2 cup coconut
1/2 cup oatmeal
1 cup flour
1 tsp baking soda
Spread in a greased 9" pan
Filling--Combine
2 eggs well beaten
1 cup choc chips
1/2 cup brown sugar
1/2 cup nuts ( could be omitted and more coconut added)
1/4 cup butter or marge
1 T flour
Spread on cookie mixture
Bake at 350 for 30 - 35 min
